So…around my birthday timeframe, I got into a discussion with Mehul about CakeLove – I think it’s completely overrated (& that I could do better), he thinks their triple chocolate raspberry cake is the bestest. A challenge was born in my head that I could make this cake – make it better – and give it to Mehul for his birthday.

And that is just what I did.

Dark chocolate layers on top and bottom, white chocolate layer in the middle, milk chocolate ganache around the outside, vanilla buttercream & fresh raspberries holding it all together….yum.

The result? I think it was pretty darned good. Mehul said he liked it and it wasn’t as heavy as cakelove, but maybe he was just being nice to me.

The best part? It made such a big cake that we still have half of it leftover.
